    1. Wine was a long-standing symbol of the nation of Israel (Isa. 5.7). So also their religion and their covenant with God.
    2. The absence of wine represents the covenant curses on Israel for their disobedience (Dt. 28.39; Isa. 5.10; 24.7-13; Hos. 2.8; 9.2; Joel 1.10).
    3. Turning water to wine is symbolic of the transition from the old age to the new. Jesus declared that the old system was incompatible with the gospel (Mt. 9.17).
    4. The prophesied “Lion of Judah” (Gn. 49.10-11)—a messianic prophecy—is described with wine imagery.
    5. The coming messianic age is described as a time when the mountains and hills will flow with wine (Amos 9.13; cf. also Joel 2.24; Isa. 25.6; Hos. 14.7; Joel 3.8).
    6. Jeremiah prophesied that the regathering and restoration of God’s repentant remnant would bring unrestrained celebration (Jer. 31.12).

It doesn't have anything to do with alcohol, per se, or that wine is alcoholic. It has to do with all the symbolism of wine.
