Why do we use a symbol of the crucifixion instead of a symbol for the resurrection?

According to Paul, our freedom from sin was won on the cross (Col. 2.14). That's where the atonement took place. Though Paul strongly emphasizes the resurrection, it is the cross of Christ where the power is (1 Cor. 1.17) and where our message is (1 Cor. 1.18, 23; 2.2). Galatians 6:14: "May I never boast except in the cross of our Lord Jesus Christ..."
