The pig was objectionable to the Israelites for numerous reasons: (1) it eats carrion, and the Israelites avoided contact with carrion; (2) it was incompatible with their nomadic way of life; (3) it was associated in other cultures (Assyria, Hittite, Egyptian, Canaanite) with underworld deities; (4) it was at times associated with idolatry (Isaiah 66.3).
As far as we Christians, it's OK for us to eat pork because we are not under Israelite law. The law was meant for them, in their theocracy, and their covenant relationship with God. Just as if, for instance, our government were to fall, we would not still live under the Constitution.
I'm not sure what you're getting at with your question, though. Possibly you could be more specific.
