> Didn't God create us in His image?
Yes He did, but that has nothing to do with our materiality or our corporeality. Genesis 1.26-28 says that when God made humans in His image, He set them to rule over creation and subdue it. It seems that our imagines is that we are responsible to care for the Earth the way God would care for it. It's both a scientific mandate and an environmental-responsibility mandate. It has nothing to do with our physicality.
> Why didn't He also make us metaphysical beings not made of anything if that is possible?
No one knows the answer to that question. Possibly because we are created to participate in a physical, natural environment. It is interesting that the Bible says we are both corporeal and metaphysical (Gbn. 2.7: we became living souls).
> It seems weird that He would create all this material to make people when you don't need material to think or otherwise exist.
I don't consider it weird. Our materiality gives us a commonality with the rest of creation and nature; our metaphysicality gives us the ability to commune with the God who made us.
