Are all things really possible through God?

If 'through God all things are possible,' how does one determine legitimate spiritual claims?

Or to put things another way, how does one apply scientific theory to everything in their life when faith in an allmighty means that ANY 'rule' of science can be broken?

Let's talk about something like, say, https://www.youtube.com/watch?v=WWRniMqhr00, where people claim they can be sustained purely on light energy and love instead of nourishment. This has no basis whatsoever, of course, but a fundamental argument is simply that an all-powerful god certainly could make this true. One might claim that this can be easily debunked just by watching people on camera for extended periods, but the double-slit experiment has already proven that science (and spiritual fact) operates differently when observed, as if there are secrets about the nature of our reality that must remain spiritual and personal in nature and can't be widely revealed.

Or take a book like Conversations With God, written by a man who claims to have experienced divine channeling. Certainly this could be true, but is it? And if not, how can the bible, a work that has (understandably) undergone intense scrutiny and found to be partially politically-motivated and certainly fallible, be considered to be a more scientifically-minded source of truth?

At some point, we have to take to leap of faith from rationally-minded to accepting our ignorance in a grand plan. But how does one find a balance in both surrendering and retaining a healthy skepticism?

The constant context of these words of Jesus pertain to salvation from sin. No one is beyond God's reach for hope of salvation. That's what it's talking about, not any of that other stuff you mentioned.
